Tuscan Excellences: Cheese

A day tour to discover an unknown gem of southern Tuscany: Vitozza. The first part of the tour is dedicated to the visit of this rural settlement of more than 200 caves excavated in tuff, where people used to live; it’s astonishing seeing how they lived in caves. Then we’ll reach the farm and visit the shed where the sheep live. You will learn how they get milked and fed and depending on the season you will also meet many cute lambs. Our guide will give you a detailed introduction to the world of cheese making, from the fresh milk through the curdling process, up to the matured wheels of pecorino cheese, during a very interesting visit to the dairy in the farm. You will then sit in the communal room for tasting a lot of delicious kinds of cheese, from different sorts of pecorino, to ricotta, stracchino served with other specialties produced by the farm.
